With a cherry on top!

This weekend, we made these:

I saw them on Bakerella’s site and fell in love. She also puts them on lollipop sticks and molds them into different shapes. So cute!  The recipe makes 50 so I knew I couldn’t make them just for the fun of it. I’ve been waiting for the perfect reason and it happened this weekend. I was responsible to supply baked goods for an open house at Natalie’s school. 
So we made them. If you want to make them too head on over to this post on Bakerella.com ….. she has much better instructions and pictures than I do. 
They were not terribly time consuming, although they did take more time than cookies or conventional cupcakes. And they were easy enough to let the girls help. Ainsley put on the sprinkles and Natalie placed the m&m’s. “Just like a cherry on top of ice cream!” she said. 
The chocolate on her face is not from our cupcakes! We had left over chocolate which Henry used to slather on bananas with peanut butter. A very delicious snack while we waited for the cupcake bottoms to dry. 
Ainsley got tired before we completed all 50… surprise! So she moved on to licking the spoon I had used to stir the melted chocolate. Natalie also tired with about 15 to go. I told her we couldn’t taste them until I was all done so she said, “I’m tired of doing this, but I’m not going to stop because I want to taste them faster.”  Boy, she’s smart.
My only complaint is they are extremely rich. They are basically a box cake mixed with cream cheese frosting and dipped in melted chocolate. Henry and I both felt one was enough… even with a glass of milk. I’m trying to decide if this is a bad thing. I would like to try them again but perhaps with something less sweet as the binder for the cake ball. Any suggestions?

    That is funny, I also “Tried” to make these. I had sent hubs out to get all the things for it and we didnt get the right chocolate for it. I melted chocolate chips, much to thick so we only dipped half of the little ball. It took longer to set up, but they were still good and the kids loved them. Going to try them again next weekend for a Hail party I hope they will turn out this time.

    try just normal frosting instead of the cream cheese. deej and i made something similar and found that it was less rich this way. you can also not cover them with the outer chocolate and they are still delicious AND you can use any flavor cake mix you want… ours did not look as beautiful as yours!

    If the store bought frosting is too rich you could make your own cream cheese frosting and use less sugar…maybe that would work?

    Could you try mixing in something lighter like cool whip in addition to the frosting?

    I wonder if I’m totally off by thinking sour cream or yogurt might work. Not as sticky, but still moist.

    Ohhhhh my. You made cake balls. They are the bessst. I’ve made tons of variations on this recipe. You can use almost any kind of wet ingredient… frosting, cream cheese, even flavored coffee creamer (it’s surprisingly good!). This might help cut some of the sweetness. I love the red velvet cake mix… or chocolate cake with orange peel and chocolate orange icing. Hope it was fun!

    those turned out great. I made these from Bakeralla a year ago for Zach’s birthday and it took a long time. And I did it with homemade brownies. Not too right, and I didn’t add anything, just rolled up the brownies. And then I didn’t have the chocolate she calls for, so I just used chocolate and melted it. It kept drying too quickly. They are great to make in winter because you can put them outside to freeze. love yours

    I made Bakerella’s cake pops and took them to a ladies bible study once and I thought the girls were going to fight each other for the last one. They are delicious!

    Those are so cute! I want to try them. I think you could try greek yogurt (strained yogurt). It’s really thick and should hold up ok.
