Easy Peazy PB Cookies.

Sometimes I’m in the mood for something sweet but don’t really want to put forth that much effort. In those moments I turn to a tried and true flourless recipe for peanut butter cookies. There are three ingredients: 1 cup sugar, 1 cup peanut butter (must be the not-good-for-you kind with hydrogenated oils), and 1 egg.
Seriously. Three ingredients, people!

I only had crunchy peanut butter, but it worked just as well as the creamy. The mixing takes all of 60 seconds.

Bake at 350 degrees for 16-18 minutes. Let cool on the pan for 2 minutes more before transferring them to a baking rack. For kicks, I stuck some M&Ms on the cookies after they came out of the oven – Ainsley loves chocolate.

And that’s it. Voila! A sweet snack in about 25 minutes total. Enjoy!
P.S. I got this recipe from a Pampered Chef recipe book under “Easy Peanut Butter Presses”. The original goes something like this:
1 cup sugar, 1 egg, 1 cup creamy peanut butter, 2 tbsp peanuts chopped, 1/2 cup semi-seet chocolate morsels.
Preheat oven to 350 F. In bowl, combine sugar and egg, stir in peanut butter until completely blended.
Fit Cookie Press with desired disk, making sure the number on the disk is facing outward, away from the dough. Fill cookie press with dough. Press dough onto pan 1 inch apart.
Bake 12-14 minutes or until cookies are set and light golden brown. Coll 2 minutes on baking sheet; remove to cooling rack. Cool Completely. Repeat with remaining dough.
Chop peanuts. Place chocolate morsels in microwave, uncovered, on high 1 minute or until chocolate is melted and smooth, stirring after each 20-second interval. Drizzle chocolate over cookies; sprinkle with peanuts. Let stand until chocolate is set.

    I use that recipe and LOVE it. It is important to note though that you have to use regular peanut butter not the reduced fat kind or else the cookies will be super flat and not turn out 🙂

    My aunt gave me this recipe when we were on WIC when my boys were smaller and I couldn’t believe how very simple they are.
    Another recipe I didn’t believe actually works is the one with a box of cake mix and a can (regular size) of soda pop. I thought for sure you’d need oil or eggs or SOMETHING other than just soda pop. But nope, it bakes up tasty and with only those 2 items which is nice when you’re low on eggs or oil and feel like cake. 😉
