Ryan’s surgery yesterday went according to plan. The surgeon was extremely pleased with how things turned out and the ease of placing the tube. There is always concern that a bowel or intestine will be in the way and he said the refracting light (what they use to guide the tube placement) was crystal clear. He is confident nothing was in the way and the tube is in the right place. Yeah!
Double yeah is the fact Ryan stayed in the recovery room for 6 hours observation and then was sent home. IN AND OUT THE SAME DAY?? It’s our first time. I’m pretty stoked. His belly is a bit sore today, but otherwise he’s a happy boy. Thank you for all your prayers.
And now on to today’s recipe. I’ve been thinking of trying to make fish tacos for some time now, but having never seen it done was hesitant to try. Then my sister made some over fourth of July weekend at my mom’s house. Armed with a tutorial I set about making my own. She used a bit of taco seasoning, but I decided to use some Cajun seasoning I had in the pantry.
I sprinkled both sides of the fish (frozen tilapia in my case) with salt, pepper, and the Cajun seasoning. Then sauteed the filets in a cast iron pan until they were opaque in the middle.
Once the fish was cooked, I pulled it apart with a fork in a metal bowl.
Here is Ainsley telling me which toppings she wants on her tacos. We layered fresh tomatoes, onions, avocado, grated cheese, salsa, sour cream, black beans, cilantro and shredded cabbage along with the fish on flour taco shells.
They tasted amazing. This will definitely become a regular on our menu.

I was just blogging around today, and I found your blog. I found I couldn’t stop reading. You are by far one of the most courageous families I have read about. I am glad little Ryan’s surgery went well. It is a miracle he is here, and improving apparantly. But you and your husband are also the strong ones, no wonder Ryan is making it. I had thought the same thing before…we never see pictures of Ryan crying. So I guess these pictures show he is a normal little guy who gets his feelings hurt just like the rest of us. (:>)
