Pinterest Party – Cinnamon Roll Pancakes

We actually made three recipes off Pinterest in the last week. These:

Cinnamon Roll Pancakes – that don’t have a link back on Pinterest. Boo! 

We made our own version on Saturday morning. You basically make your pancakes like you always do then make a cinnamon filling and cream cheese icing.

We added a little more cinnamon in the end. 

These were very good… the first bite reminds me of a cinnamon roll. The aftertaste reminds me of a cinnamon Auntie Anne’s pretzel… you know that baking soda taste?  Well, I’m gonna have to fix that if we have them again, which we probably will. It’s not the baking soda in my pancakes, cuz these are my default recipe and do not taste like baking soda.

Cinnamon Roll Pancakes:

Pancakes –
1 cup all-purpose flour
1 tbsp sugar
2 tsp baking powder
1/4 tsp salt
1 beaten egg
1 cup buttermilk
2 tbsp cooking oil
(my mom has always made pancakes in the blender for easy pouring. I can double the recipe with no problem in my blender. I put the wet ingredients in first so the flour doesn’t stick in the bottom.)

Cinnamon Filling:
1/2 cup melted butter
3/4 cup brown sugar
1 tbsp ground cinnamon

Cream Cheese Icing:
4 tbsp butter
2 oz cream cheese
3/4 cup powdered sugar
1/2 tsp vanilla extract

    Girl, I’ve been pinteresting it up lately trying to get ready for summer!! I can’t wait to have all my kiddos home with me, but I also need a plan or things will fall to pieces, so I’ve been planning and crafting and creating so much fun stuff!!

    Ummm…yummm!!! The cinnamon roll pancakes look delish!

    i used funfetti cake mix and they were so good and very pretty! the dough is very sticky and gooey, so, someone suggested you put the dough in the fridge for 20 minutes before “rolling” it. i just scooped it on one spoon, and used another to scrap it off into the conf.sugar.

    I tried the pancakes, but when I flipped them over, the sugar mixture burned. I couldn’t keep the pancakes on the second side for long, and had to keep cleaning the burnt sugar off the griddle. Probably won’t get tried again –
