Pinterest Party: Mini-German Pancakes

I was first introduced to German pancakes when friends had us over for brunch a decade ago. I haven’t eaten once since… I’ve thought a lot about them though. So when I saw this recipe (on Real Mom Kitchen via Pinterest, of course) for mini-German pancakes, I jumped at the chance to make them for the kids.
The recipe is made in a blender and baked in muffin tins. I mixed it up it in less than five minutes. I had to sit and wait for the oven to finish pre-heating. Can anyone say, “easy?” My only warning is that you need to make a lot. I made 18 and between the 4 of us, we ate them all. Daddy wasn’t even home to help us. I probably could’ve made 24 with the recipe, but I only have 18 muffin spots! Ha! Also, they taste egg-y so those who don’t like egg custards or the like need not partake. I found them to be utterly delightful.

Mini-German Pancakes

1 cup milk
6 eggs
1 cup flour
1/2 tsp. salt
1 tsp. vanilla
1 tsp. orange zest (optional)
1/4 cup butter, melted

  1. Preheat oven to 400 degrees F. Blend first six ingredients in a blender. Make sure any flour clumps get well-blended.
  2. Mix in butter slowly to temper the eggs. (I poured mine through the blender top slowly and it worked fine)
  3. Fill 24 greased muffin tins evenly
  4. Bake for 15 minutes, or until puffy and golden on top.
  5. Top with fresh fruit, syrup, and sugar. (We topped ours with powdered sugar, maple syrup, and fresh strawberries)

    those DO look yummy, the other Pin I want to try from my board is the pancake cooked over/around/on a piece of bacon.

    i don’t have a blog, but i made this http://www.tasteofhome.com/Recipes/Pesto-Chicken-Penne-Casseroles a few days ago (i found it on pinterest). it was AMAZING! (i only used half the cheese and half the pesto and it was great!)
