Monday, Monday….

July 19, 2010/Menu

I did not do a good job of balancing last week and by Sunday was not in a good place. The house is beyond cluttered and disorganized, I worked from 7 a.m. until nearly midnight every night to get things done and I feel like I barely put a dent in the pile. Granted four of those days were painting the girls’ bedrooms (long story short is I knew if I didn’t do it before we set up their beds – Ainsley’s bed is massive – it wouldn’t get done for 10 years so I rushed to do it this week). I felt so overwhelmed I almost skipped my basketball game. Very glad I didn’t because I feel a ton better now.

The chocolate chip cookie with walnut pieces from Wegman’s on the way home helped too.

And, a friend and I stopped at Walmart for groceries after the cookie run so I feel on top of dinner this week (way better than last week’s eggs, pb and j and spaghetti). Here is what we can look forward to this week for dinner:

Monday – Peruvian Chicken with Rice, zucchini
Tuesday – Bean burritos with the works
Wednesday – Beef and Veggie Kabobs, rice, possibly a daal
Thursday – Poppy Seed Chicken over rice, broccoli
Friday – BBQ chicken and some brilliant side I’ll think up this week.

Lots of rice but I think it will be okay since the main dishes are so different and easy since I can make it all in one batch. For more menu ideas, check out OrgJunkie’s Menu Plan Monday.

    I still need to plan my menu and go grocery shopping for the week. What is the recipe to your kabob meal? Sounds good.
    Go easy on yourself. You are in the process of moving into a new house. HUGE UNDERTAKING! With time, organization will come. What color are the girls rooms?

    I’d like to know your recipe for Poppy Seed Chicken over rice. I haven’t planned my menu yet. My parents are here for a long weekend so I don’t have to cook tonight! Then they’re taking my almost 6 year old to their house for the rest of the week. So it’s just me, hubby, and our slightly picky 14 month old. So I hope to take it easy!

    i LOVE the poppy seed chicken recipe! need to do that soon!

    we are having:
    lasagna
    bagel sandwiches
    bacon and eggs
    kielbasa and rice

    Well, tonight we had a traditional Cape Malay meal called Bobotie (pronounced bub-oo-ti)with rice and veg (very easy to make using ground beef and very tasty). The rest of the week we will be having:

    Baked potatoes with a bacon, mushroom and cheese sauce.

    Beef and beer stew also with rice

    Chicken breasts cooked in mayonaisse and chutney (doesnt sound as delicious as it tastes) with fried potatoes

    Leftover beef stew made into individual pies with chips (or fries as you call them)

    Friday nights in our house is usually something super easy to make like eggs on toast/french toast/toasted sandwiches etc

    We are a family of 6 and I am all for easy meals – ones that dont have me slaving over the hot stove for hours!

    Some of your recipes (like poppy seed chicken) sound eally yummy!

    today was poppy seed chicken
    Tuesday will probably be Mexican chicken
    Wednesday will probably be swiss stuffing chicken
    Thursday will probably be chicken pot pie

    Yes, it is a lot of chicken but it is pretty much the only think my youngest will eat
