I have so much blogging to catch up on, but in the meantime so you don’t think it’s all glitz and glam around here… menu planning sometimes happens on a napkin.

Tuesday was Maple Chili dump chicken (chicken, 2 tbsp maple syrup, 1 tbsp chili powder, 1/2 tsp salt, 2 tbsp water) and Wednesday we had hot dogs since daddy had another commitment and the kids were begging for hot dogs.

One recipe we tried recently that our family loved and I wished I made more of was these Chicken Stuffed Peppers. I’ve stuffed peppers with beef before but never thought to use chicken. Duh. It calls for salsa so make sure you use a salsa you like. I used her taco seasoning recipe and it was delicious. So delicious in fact that I saved the leftover sauce and ate it for lunch on basically any leftover meat in the fridge for the next few days.

    I make hutsput aka stumpput. It’s a Dutch recipe. Peel and cut up about 6 potatoes, 7 carrots and 1 large onion. Place in large pan. Break apart 1 1/2 lbs ground beef over top. salt and pepper Add about 1″ water to pan. Place in 350* oven about 1 1/2 to 2 hours till potatoes and carrots are tender. Add 1 14oz can pork and beans and mash all together with potatoe masher. Make a thick gravy to serve over top. YUM YUM ! I’ll make some and post it on my blog some time soon 🙂

    I go to Mix and Match Family blog for all my new recipes. My family has loved everything I’ve made….from meatloaf, to an enchilada casserole, to chicken cordon bleu and an awesome blackberry/raspberry cobbler. This week I am making turkey/spinach/pesto taco’s from her blog.

    Amish Chicken (it makes it’s own gravy while baking).

    6 -8 chicken pieces, cleaned (you can use chicken tenderloins)
    1 cup flour
    2 teaspoons garlic powder
    1 tablespoon salt …
    1 teaspoon pepper
    2 teaspoons paprika
    1 1/2 cups heavy whipping cream
    1 1/2 chicken cubes melted with 1 1/2 hot water

    I Love to double the sauce and you may need to since its the BEST PART OF THIS FINE MEAL!!!!!!!!!
    I really love making this with Farfallnoodles other wise known as bow tie nooddles.
    Dredge the chicken pieces in the flour and spices and arrange skin side up in a baking dish. Mix the cream and water and pour over the chicken. Bake at 350* for 1 1/2 hours or until the skin is golden brown.

      Laurie – I made it in the crockpot the first time and it was dry (I find most chicken breast dishes are dry in the crockpot). I made it the second time in the oven and it was perfect.
