It’s been three weeks since I resolved to make dinner time simpler by using casseroles and crockpot recipes. And let me tell you, wow!, after school time is much more enjoyable for me. Not sure if anyone else is noticing, but I am!
Here are our menus from the last few weeks including links in case anyone wants to try some new crockpot recipes.
Week 1 (Henry worked a lot meaning less cooking for me!)
Monday: Red beans and rice (slow cooker – southern living)
Thursday: Chicken Tetrazzini

Okay, funny story about this tetrazzini. I was in a hurry and started throwing all the ingredients into the crockpot. When I got to the flour, I paused. Flour? In the crockpot? It was then I realized this was a casserole with PASTA in it, not a crockpot meal. What was a girl to do? I threw some chicken broth over the ingredients I already had in the crockpot (meat, onions, mushrooms) and then threw the spices in and called it a day. I figured the worst is that I’d have some flavorful chicken. And it was the best thing that could’ve happened. I’m sure Tetrazzini is great – I’ve never had it – but I’m telling you the pasta-free crockpot version is GREAT!! My family loved it. I’m making this mistake again and adding a little more chicken broth to make it more soupy. We ate it over rice to round out the meal.

Week 2 (Another hellacious week for Henry, so more leftovers)
Monday: Tarragon Chicken, asparagus, rice

Tuesday: left-over Tarragon Chicken
Weds.: Stuffed Pork chops, couscous, et al
Thursday: Chili and Corn bread
Friday: leftover chili
Saturday: Kale, Sausage, Potato Soup with yeast rolls
Week 3
Monday: Chicken cacciatore, brussel sprouts, over linguine
(Really easy crockpot recipe from Woman’s Day Mag: combine 1.5 cups marinara sauce, 1/2 c thinly sliced onion, 1/4 c tomato paste, 1/4 c red or white wine (substitute 1 tbsp red wine vinegar), 1/2 tsp each dried rosemary and salt, 8 small chix thighs and drumsticks, 8 oz. mushrooms, cut in half or quartered if large in a crockpot. Cook on high for 4 hours or low for 8 hours)
Tuesday: Portugese Steaks w/roasted potatoes and carrots

Thurs.: Brazilian Chicken Curry, steamed green beans, potatoes

~I’m omitting the onions next time. They overpowered the other flavors. I’m hoping next time to actually taste the ginger and curry.
Friday: left overs
Saturday: Potato soup

I am going to try a few of those. I have been having an affair with my crockpots 4 of them (One is a double crock)for years. I can now crock a some days and have meals for a those nights when dad needs to make dinner and not worry the kids are eating card board pizza..
