Paleo Fried Zucchini Bites

I’ve been off grains and dairy the last few weeks, which pretty much leaves my diet paleo in nature. Henry and I ate paleo for awhile (a year maybe) before I got pregnant with Piper at which time I needed something – bread, crackers, wheat-filled items – to try and calm my morning sickness.  I realized in that time I came back to main-stream eating that I actually have a sensitivity to gluten. Who knew. So I switched to gluten-free products.

Recently though, I’ve been thinking of the benefits of the paleo diet – it decreases inflammation and bloating – and have gone back to it strictly. I can already tell a difference.

But the first week or two is always the hardest. I craved my gluten-free desserts, chocolate and chips for the first 10 days. The struggle is real, people.

One of my biggest complaints of the paleo diet is that meals can get boring without putting in a lot of prep/cook time – something that’s a luxury for me right now. So I’ve been craving texture.

Last night, I got creative and made almond-meal “breaded” zucchini and panned fried it to go along with my grilled chicken.

It was DELICIOUS!!

I started with one egg, beaten and a small bowl of almond meal to which I added salt, pepper, and dried oregano. I coated each slice of zucchini and pan fried it in a skillet of olive oil over medium heat. You can probably use coconut oil too.

After they browned nicely on each side, I pulled them from the pan to rest. If I’d had paper towels, I would have let them drain on a few, however, they weren’t overly greasy.

The kids thought they were interesting – – it’s still zucchini no matter what you put on it — but Henry and I ate it like we hadn’t seen food for days.

    Looks good — a trip to the grocery store (for the almonds or almond meal – whichever I find first) is certainly on the schedule. I’ll let you know how I fared. 🙂 Thanks!
